Thai Cucumber Salad by Kaleb


For the past couple of weeks I have been craving everything Thai. I believe I have made 5-6 thai dishes for dinner in the past 12 days and it has been wonderful. I may have also had lunch at my favorite Thai restaurant once or twice in that time frame. I think I have a problem, and it is thai-tastic! So out of all of that, I decided to make a Thai Cucumber Salad inspired by a version I normally get at my our local Thai spot. This salad is very refreshing and great on a hot day. I like to eat meals like this after a long ride in the sun, to help rehydrate without slamming a whole bunch of electrolyte drinks. We hope you guys will enjoy this one...and even if you don't like cucumbers, just give this one a try. It will change your way of thinking about salads!





Ingredients
2 cucumber's (peeled & deseeded)
1/4 c. Cilantro (chopped)
1/3 c. Cashews (chopped)
1/2 c. Sugar
1/2 c. Rice wine vinegar
3 Jalapeno's (Chopped & deseeded)
Juice from half a Lemon
Curry Powder



Instructions
Step 1: Peel cucumbers in stripes, de-seed and chop into 1/8 in slices.

Step 2: Whisk together Rice win vinegar and sugar, until sugar is dissolved. Then pour in cucumber slices and mix until cucumbers are covered in mixture.  
Step 3: Next add cilantro, jalapenos, cashews, lemon juice, a little bit of curry powder and a pinch of salt to the cucumbers and mix together. (I like to save a little bit of cilantro, cashews, and jalapeno's to sprinkle on top to garnish) Also adding a dash of curry powder adds a little more kick. Enjoy!
