With all the cook outs happening since summer started, I find myself munching on a lot of dipping foods before I eat the main course. One of my favorite summer dipping foods is guacamole. Since Marilyn and I make guacamole relatively often, I try and change my main recipe up a bit each time. This is my favorite version so far...it's Spicy Guacamole! I used my mexican spice seasoning with some fresh cut tomatoes, peppers, and herbs.
Ingredients
4 Soft Avocados
2 tbsp. Mexican Spice
1/4 c. Tomato Mixture (Includes tomatoes, jalapeños, onion, parsley)
2 tbsp. Fresh Lime Juice (The other stuff works in a pinch)
Instructions
Step 1: Cut and mix the avocados in a medium size bowl.

Step 2: Add tomato mixture and stir until thoroughly mixed.

Step 3: Add Mexican Spice and stir until thoroughly mixed.

Garnish with a little left over tomato mixture and a sprig of parsley. Serve with grilled pita chips or blue corn tortilla chips. Enjoy!

ReplyDeleteAhh, guacamole is my weakness. Do you use fresh tomatoes, etc. for the mix or buy the pre-made (canned or whatnot) mix?
ReplyDeleteWe usually try to stick to using fresh tomatoes. We don't ever use mixes just because fresher is usually just as cost efficient and better for your body. :)
