One of my all time favorite types of desert is cobbler, any type of cobbler! Since cobbler is usually packed with a ton of sugar and therefore a lot of calories, I began looking for a healthier substitute. I found the perfect substitute in one of my favorite cookbooks,
The Feed Zone Cookbook, Fast and Flavorful Food for Athletes. This peach crisp is a modified version of the recipe from the cookbook. I got
The Feed Zone Cookbook for my birthday last year and have since made almost every recipe in it. I highly recommend it if you are a runner, cyclist, or just starting to make healthier choices with the food you are putting in your body. It will help educate you on what nutrients your body needs after exercising and has tailored recipes to fulfill those needs.
Ingredients (Pictured Above):
5 Nice and Ripe Peaches
1/2 c. Butter
1/2 c. All-purpose flour
1/2 c. Rolled oats
1/4 c. Brown sugar
1/2 tsp. Cinnamon
1. Preheat oven to 375 degrees, and arrange sliced peaches in an oven-safe baking dish.
2. In a medium sized bowl mix flour, oats, brown sugar, and cinnamon. Cut in butter using a fork. (The butter will not mix in completely, but that's okay. It will melt when baking.)
3. Spread mixture evenly over the top of the peaches, and bake for 25-30 minutes or until the peach crisp is golden brown.
Serve warm with your choice of ice cream and enjoy!

That looks so yummy! I love cobbler, but one of my fave desserts is apple crisp. I's pretty similar to this... except with apples. And I usually like it fresh out of the over on a scoop of ice cream. Hehe. not quite as healthy that way, I know. But now I gotta try this!
