Mango Chutney Recipe by Kaleb


Because of our active lifestyle, we are always looking for new snacks we can make ourselves that will be quick and cost-efficient. We tend to have favorite things we like to purchase when buying groceries, especially with our fruits and veggies. One of our all-time favorite fruits is mango. It never gets old and just brings a certain happiness to my day that is unlike any other fruit.

Since I love being creative in the kitchen and we had a few extra mangos in the kitchen, I decided to create a mango chutney that we could add on top of crackers. I really enjoy snacking on flavorful goodies and to give me that burst of energy I need after lunch. Just throw this in a jar, grab a roll of crackers, and take with you to snack on throughout the day. Hope you enjoy it as much as we have!

Ingredients (pictured above)
4 Medium ripe mangos, diced
1 Red Pepper, deseeded, thinly sliced
1 tsp. Brown mustard seeds
2 Tbsp. Lemon juice
1 Tbsp. Vegetable oil
1/2 c. Sugar
Salt to taste

1. Heat the oil in a saucepan on medium high heat, add the mustard seeds and fry until they start to sizzle and pop up a little bit.
2. Add the diced pepper and cook until slightly down, about 5 minutes.
3. Next add in the mangos, sugar and lemon juice, and sprinkle with a pinch of salt. Bring to a boil.
4. Then reduce heat to a simmer for 15-20 minutes or until chutney thickens. Remove from heat, and let cool.
5. Store in a airtight container and refrigerate for up to two weeks.
