Strawberry Jam by Kaleb



With the weather getting warmer and spring in full effect I have been cycling to and from work a couple times a week. The only problem is that I am burning a lot of calories and need to eat more. So I have started packing PB&J's (one of my favorite snacks) as a mid-afternoon snack. Realizing how much jam I was going through each week and being conscious of all the ingredients in the jam, I decided to make my own. This recipe is quick and easy to make.




Ingredients
2 lbs. Strawberries
3/4 c. Sugar
4 tbsp. Lemon Juice

Directions
1. Hull and chop the strawberries in to quarters and place in a food processor or blender. Pulse the blender until strawberries mixed coarsely.




2. Transfer strawberry mixture to a large sauce pan and stir in sugar and lemon juice.



3. Cook over medium-high heat, stirring frequently, until mixture thickens. About 10 minutes.



4. Transfer to a mason jar and let cool, refrigerate to store. Jam should be good for up to 2 weeks, if it last that long. Enjoy!
