Marilyn and I usually don't make a lot of time to sit down and eat breakfast. And we are not naturally 'morning people' so we generally end up eating a quick something once we get to work and our bodies have had a chance to wake up. We try to have breakfast and snack options that we can make quickly and take with us. Preparing this easy-to-make homemade granola on the weekend and storing in jars allows us to have one more healthy option. We really enjoyed making this sweet recipe and hope that you will as well!
Ingredients
4 c. Old fashioned rolled oats
1 c. Honey
1/2 c. Olive oil
Chopped nuts (We used Sunflower Seeds)
Homemade trail mix
Sesame seeds
Directions
1. Preheat the over to 300 degrees.
2. In a large bowl combine old fashioned rolled oats, chopped nuts, trail mix, sesame seeds and mix well.
3. Combine honey and olive oil and pour into dry mixture.
4. Mix until all ingredients are sticking together in clumps.
5. Place on a baking sheet lined with parchment, and bake for 35 minutes, stir a few times while it is baking.
Store in a air tight container, mason jars work great for this. This makes a wonderful and fulfilling snack by itself or is also great with some fruit and yogurt. Enjoy!

I've made a gluten free version too (just use gluten free oats) that is sweetened with maple syrup. I just love home made granola! So much fresher than store bought.
