Fall Salad by Kaleb






We recently had dinner plans with some close friends and they asked us to bring a salad. For fall, I wanted to bring something that was more fitting to the season. I was inspired by this salad I had come across in a magazine that looked delicious and contained roasted sweet potatoes. I decided to create our own version using roasted butternut squash instead. I have not dealt much with butternut squash in the past, so I was really impressed with the outcome. The squash turned out wonderfully! I added some pears and granola, which happen to be some of my other favorite salad ingredients. We had a wonderful dinner with our friends and the salad was a hit! We will definitely be enjoying this dish again over the next few months of cold weather. I hope you guys will give it a try! In this case, the combination of flavors really do taste as good as it looks.

Ingredients
Arugula
Mixed Greens
2 Pears
Mixed Apple and Cherry Granola
Feta Cheese
Roasted Butternut Squash
Honey Basalmic Vinaigrette


Instructions
Step 1: Chop greens and place into bowl, mix in remaining ingredients.
Step 2: Add a little roasted butternut squash on top and drizzle with the Honey Balsamic dressing. Eat and Enjoy!
