Cous Cous Tacos by Kaleb

Last year we were encouraged by Life Church to do a 6 week fast of our choice in order to clean out our systems and to really consider our goals for the year. We realized this fast would force us to become extremely creative with our recipes. You would not realize how much processing goes on in most of the foods you will find here in the U.S. After input from some friends, we decided to do the Daniel Fast. For those of you who don't know what that is, you are pretty much vegan and also can't do artificial sweeteners or anything with msg; also you can't have any bread that has used yeast to make it rise. What you take in must remain pure (and no additives or chemicals) for the most part. 

Adapting a few recipes, I perfected this yummy Cous Cous Taco recipe to exactly our liking. We love it because it makes you feel satisfied after eating, but you also feel good about your body. There are no feelings of regret or like the food is 'sticking to your bones.' It feels like you are taking in exactly what your body asked for. Creating recipes like this has changed our lives. And while we are not 100% vegan, the Daniel Fast certainly made us more aware of what we are putting in our bodies.We encourage you guys to try it out! Eating right will truly make you feel good inside and out.



Ingredients
1 c. Cous Cous
3 Peppers
3 Tomatoes Skinned
1/2 Onion
1/2 c. White raisins
1/4 c. Sunflower seeds
1 c. Spinach
1/4 c. Fresh parsley



Directions:
Step 1: Bring water to a boil, stir in cous cous, remove from heat source, cover and let sit for 5 minutes.

Step 2: Add oil and chopped onion to a large saucepan. Cook until onions are translucent.

Step 3: Next add cous cous and chopped peppers, tomatoes, spinach. Cook until cous cous is golden brown. Stir occasionally so the cous cous does not stick to the pan.

Step 4: Add raisins, sunflower seeds, parsley and whatever seasoning you prefer. I like to use curry powder or mexican spices. Have fun and expierment with different flavors.

Step 5: Serve on hard or soft shell tacos with salsa, mixed greens and guacamole. Enjoy!

  10. Awesome idea using couscous in tacos. Everything you said is so true. The first time I did the Daniel fast I really learned to get creative with healthy, whole foods. I didn't go into it from a health perspective, but that was a welcome bonus.
