Banana bread is one of my favorite recipes to make. Kaleb and I love to make it on the weekend as a breakfast or snack for the week. My grandmother would bake banana bread on a regular basis for the family when my brother and I were young. It was always a way for her to use up her old bananas since she always kept the other ingredients in the house. I try to keep the same tradition alive in our home. We always have bananas in the house as a quick snack. So when they start getting spots, I get excited to use them for this recipe. I've adapted this recipe from several recipes, including my grandmother's. I hope you will enjoy this recipe as much as we have!
Ingredients:
1 C. White Flour
1 C. Whole Wheat Flour
1 C. White Sugar
1/4 C. Unsalted Butter
1/4 C. Water
2 Large Eggs
2-3 Ripe Bananas
1 Tbsp. Baking Soda
1 Tbsp Baking Powder
1Tbsp Vanilla
1 Pinch of Salt
(Optional: 3 Tbsp Brown Sugar)
Directions:
Preheat oven to 350 degrees.
Soften your butter and blend in the sugar and eggs until well mixed. Add in your bananas a half a banana at a time until your mixture is consistent. Slowly add in your flour cup by cup and then add in your baking soda, baking powder, vanilla, and salt until mixture is consistent.
Pour mixture into a greased bread pan and sprinkle brown sugar over the top. Put in oven and bake for 50-60 minutes. Poke with a fork in the center to check when done.
