Sweet Potato Casserole in a Jar Recipe by Marilyn



Growing up in South Carolina, it has always been a tradition to have sweet potato casserole at Thanksgiving. There are several variations on this recipe, but I have always preferred this simple one. There are much less ingredients in this recipe and with all of the other casseroles, etc. you may be taking in on Thanksgiving, I believe the less ingredients, the better. Now that I've lived in Oklahoma for quite some time, I find that this dish is a rare breed here. So any time we celebrate Thanksgiving, I volunteer to make this one. This year, I'm changing it up and doing a 1 serving size per person in a jar! If you have an obligation to make something for Thanksgiving, this is a great one that is easy and delicious!

Ingredients:
5-6 Medium Sweet Potatoes
1 Bag of Small Marshamows
1 Stick Butter
1/2 C. Water
3 Tbpsns Orange Juice
2 Tbspns Cinnamon
1 Tbspn Sea Salt
Approx. 20 small jars (or you can use a lesser amount of larger jars, or this can also be made in a casserole dish)

Step 1: Bake your sweet potatoes until fully cooked or you can speed up the process by microwaving them (without chemicals) using this DIY Microwaveable Potato Bag for 6 minutes each.

Step 2: Preheat oven to 350 degrees. Peel your potatoes and blend them in a large mixing bowl until smooth. Add the butter and allow this to melt completely. Add all other ingredients and blend until smooth.

Step 3: Take a small spoon and place a few spoonfuls of the mixture into each of your jars until 3/4 full. Cover with a layer of marshmallows until mixture is completely covered. Place in the oven for about 10-15 minutes or until the marshmallows are slightly roasted. Remove from the oven and amaze everyone with your Southern Charm!
