One of my favorite foods in the world is pumpkin pie. I love it so much and have never been the biggest fan of traditional birthday cake on my birthday. So through my years of college, my Aunt Suzanne would make me pumpkin pie on my birthday because she knew it was my favorite (even though it falls in September). I'm so grateful for my thoughtful aunt and her delicious recipes! She makes a wonderful pumpkin pie squares recipe and I have adapted my own version from it. I hope you all will give it a try. It's as easy to make as it is delicious! (Makes about 20-30 pieces).
Crust Ingredients:
1 C. All Purpose Flour
1/2 C. Quick Whole Oats
1/2 C. Packed Brown Sugar
1/2 C. Butter
Filling Ingredients:
2 Cans Pumpkin
2 Cans Evaporated Milk
3 Eggs
1/2 C. White Sugar
1/2 C. Brown Sugar
2 tsp. Ground Cinnamon
1 tsp. Ground Ginger
1/2 tsp. Ground Cloves
1 tsp. Salt
Step 1: To make the crust, be sure to soften your butter and then you will combine your crust ingredients. Press the mixture into a greased 13"x9" pan. Bake at 350 degrees for 20 minutes or until golden brown.
Step 2: For the filling, you mix all the filling ingredients in a large mixing bowl until smooth. Pour over the crust and return your pan to the oven to bake for 45 more minutes.
Step 3 (Optional): If you would like to add a little more sweetness, you can sprinkle brown sugar, cinnamon, and almonds on the top of the filling once it has finished baking and has cooled.
Step 4: Serve and enjoy!
